OMG…guess where I am going this weekend? I’ll give you a hint…

IMG_7775-3What better way to celebrate my bachelorette bash than Champagne and pink popsicles!?! Am I right?  Pop the bubbly!  These popsicles were literally SO simple to make that I’m almost embarrassed to share it…almost.  It took basically NO time at all and the pops were delicious!  I used a Zoku Popsicle Maker to make them and so all I had to do was make the mixture.  You could, of course, use any popsicle-maker, or just use glasses eat them more like slushies.  Your call.  Hint: there is no “wrong call” with these pops!

I made mine a little tart, and I liked them that way (and so did my friend’s husband) but my mom wanted them a bit sweeter so I will provide the instructions for “tart” but if you really want sweet, just add a teaspoon or so of sugar.  If you’re feeling sassy, you can even pour a little extra bubbly in a glass and dip the pops in them!  You’re choice!

Champagne Raspberry Grapefruit Pops!
 
Makes 6 Popsicles

  • 3 teaspoons sugar for "tart" (maybe 4 or 5 for sweet…add to your liking)
  • ½ cup fresh raspberries
  • 1 grapefruit plus juices
  • ½ cup champagne
Procedure
  1. Mix all ingredients in a bowl and puree with an immersion blender (you could also use a blender or food processor).
  2. Use popsicle-maker according to manufacturers' instructions (or freeze them in glasses in the freezer for a few hours and enjoy like a slushy).
  3. Enjoy with extra bubbly!
The Verdict
These popsicles were amazing and honestly perfectly encapsulated my vision for my girls weekend! Girly and bubbly and sweet! I can't wait to make them again!
