So last weekend the Panthers played the Patriots in their first preseason game.  Anytime these two play each other, it’s interesting, as we have sort of a “house divided.”  My husband is from New Hampshire and has been a Pats fan his entire life, so I think we know who he was rooting for 😉  With the official start of football season around the corner, it’s time to tailgate!

To celebrate my husband’s loyalty to the Patriots, I decided to be one of the two Patriots reps!  I’ll admit it hurts a bit after the 2004 Super Bowl, but it’s hard not to love a team your husband loves 😉  We also have a “house divided” for UNC/Duke but we do pretty well at keeping our cool 😉

For this recipe, I wanted to celebrate New England.  The first thing I think of when I think of New England is chowder, of course!  My husband LOVES corn chowder so I decided on corn chowder instead of clam.  When I went to the store to get the corn chowder, I saw that they had “New England Style” lobster corn chowder by Bar Harbor!  It was perfect!  chowder stuffed jalapeno poppers

You can make these with any corn or clam chowder.  If you are outside tailgating, I recommend grilling these!  Just grill them until the bacon is crispy and you are all set!  They may not be beautiful but they sure are tasty!!

Chowder Stuffed Jalapeno Poppers

The Elements
  • 30 jalapeños, top cut off and saved, sliced in half with seeds removed (I used a spoon and it was really easy!)
  • 1 can corn chowder (strain excess liquid, if any)
  • 8 oz. plain cream cheese
  • ½ lemon juice
  • 1 clove garlic minced
  • ¼ white onion minced
  • ¼ tsp pepper
  • ½ tsp kosher salt
  • ⅓ cup shredded monterrey jack
  • 15 slices of bacon
Procedure
  1. Preheat oven to 400 degrees
  2. Line a couple baking sheet with aluminum foil
  3. Mix soup, cream cheese, lemon juice, garlic, onion, and salt and pepper together in a bowl until blended
  4. Fill each jalapeno half with the cheese mixture then top one of the halves with some shredded monterrey jack
  5. Put halves back together and wrap each stuffed pepper with a half slice of bacon.
  6. Arrange bacon-wrapped peppers on the prepared baking sheet, spaced apart a bit
  7. Bake until bacon is crispy, about 45 minutes
The Verdict
These would be delicious on the grill too! Next time I might use a toothpick to hold the bacon on a little tighter. They may not be gorgeous but they are seriously delicious! I had five huge ones as a "pre-dinner snack"! Oops! #sorryimnotsorry
