Tasting Menu at EVOkE (Charlotte)

I was lucky enough to experience a tasting menu at EVOkE in Charlotte.  It was a meet up for Charlotte Food Bloggers and was a delightful time!

So in case you don’t know by now, I LOVE Charlotte.  It’s full of incredible things to do, delicious meals, and interesting people.  I had the pleasure of recently meeting a whole new group of interesting people through the Charlotte Food Bloggers group!  I had been posting all over Instagram about my Charlotte girls’ weekend, and the Charlotte Food Bloggers left me a comment about joining their group.  I admit I was totally fan-girling and what like “whatttt, I can be a part of this group??” and was super excited.  I applied right away and Susannah (who I’ve adored for years) and Chrissie (who is also a lawyer!!) let me join the group!

Y’all.  I honestly don’t even know where to start with this post, because I seriously have SO MUCH TO SAY.  Charlotte, North Carolina, aka The Queen City, has been my home since I was born.  I was born in Presbyterian Hospital and am what they call a “unicorn” here in Charlotte…someone who is actually FROM Charlotte.  I grew up here in the lovely QC and left after high school for a four year stint at Johns Hopkins in Baltimore (which did include a semester in Rome!) and three years at UNC Law School in Chapel Hill.  After practicing law in Raleigh for about 3 years, I was THRILLED to return back to my hometown!Girls' Weekend Charlotte

The Hornets may be a different set of Hornets, but they will always have a special place in my heart (hello, that’s why my dog is named Muggsy!) and though this amazing city has grown and changed in many ways in the ten years I was gone, it is the one place I know I can always call home and I adore it in ways I can barely express…but I will try!

Roasted Beets, Butternut Squash and Kale with an Egg

…served over brown rice with a shallot vinaigrette (that just seemed TOO long to add to the title!).  So basically a bowl of one cup brown rice, topped with roasted beets, butternut squash and kale with a soft boiled egg on top, finished with a shallot vinaigrette and parmesan (and a few chives).  Too much for a title?  It sounds like it has a lot in it, but truthfully this was the easiest thing I’ve made for a homemade meal in a WHILE!  This recipe is so perfect for the working woman (or man)… easy, flavorful and filling.brown rice topped with roasted beets, butternut squash and kale with a soft boiled egg on top, finished with a shallot vinaigrette and parmesan Continue reading →

Wedding DIY: Unique Table Numbers

It’s our wedding month!  Or rather, anniversary month!  We got married in March 2015 and I can’t believe our anniversary is rapidly approaching!  I’ve been meaning to share with you guys some of my favorite details from the wedding for some time now, and I figured now is as good a time as any, and this is a great place to start!  These easy DIY unique table numbers were the perfect extra touch to our wedding day!

I wanted our wedding to be personalized in as many ways as I could without it being a stressful DIY-mess.  One super-simple way that I was able to personalize our wedding was to use places we had been together as a couple (London, Sydney, Paris) instead of table numbers (1,2,3).

Dinner for Two and Buffalo Chicken Pizza!

I have been gone FOREVER.  But I’m back, just in time for the PANTHERS GOING TO THE SUPER BOWL!!!  And for this very very special event, I am turning to one of my new favorite cookbooks this year, Dinner for Two to serve you a delicious Buffalo Chicken Pizza!  Dinner for Two is the creative creation of Julie from Table for Two.  I’ve been such a fan of her for years, so you can imagine how excited I was that she was coming out with a cookbook!  And the fact that it’s for TWO and my hubby and I are just the two of us?  Perfection.  There are amazing recipes in the book like Parmesan-Crusted Chicken Rice Bowls, Chicken Lettuce Wraps, Slow Cooker Pulled BBQ Chicken Sandwiches, Slow Cooker White Bean and Kielbasa Soup and Beer Braised Roast with Polenta!  The recipes have such a great flavor variety and there are so many recipes and ALL for two!
